Chicken Tortilla Soup

This is my absolute favorite new recipe. It hits the spot on a cold snowy day and is as easy as dumping all the ingredients into your crock pot. It’s healthy and hot.

IMG_0274-0Here’s what you need:

  • 3 chicken breasts
  • 6 cups of chicken stock
  • 28 oz. can petite diced tomatoes
  • 1/2 cup chopped onions
  • 1 can corn
  • 1 can black beans
  • 1 small can diced green chilis
  • 2 teaspoons minced garlic
  • 1/4 teaspoon chili powder
  • 3/4 teaspoon pepper
  • 1/2 teaspoon cumin
  • 1 1/2 teaspoon salt


  • avocado
  • sprinkle cheese
  • blue corn chips
  • plain greek yogurt

Cook your chicken first. I sliced mine into strips and cooked over a little coconut oil on the stove. While it’s still hot shred it. I used my kitchen aid mixer to do this on medium speed. Add all ingredients into crock pot and cook on high for 3 hours. Top with cheese, cubed avocado, blue corn chips, and some plain greek yogurt (amazing healthy alternative to sour cream). Yum!
