“Healthy” Banana Bread
Forget the Starbucks Banana Walnut Loaf, this is freaking delicious!
2 cups Gluten Free All Purpose Baking Mix
1 1/2 cups mashed bananas (approx 3 medium sized)
1 stick of butter
1/4 tsp. salt
1 tsp baking powder
1tsp baking soda
1 cup Coconut Crystals
1/2 cup walnuts (optional)
1/2 cup dark chocolate morsels (optional)
Preheat oven to 350 degrees F. Blend all ingredients and mix well. Pour batter into a greased bread pan. Top with more walnuts if desired. Bake for 50-60min until an inserted toothpick comes out clean.
Enjoy for breakfast, dessert or mid-day snack. A cup of coffee pairs well :).
