Mommy Energy Balls

I first found this recipe on Pinterest and have tweaked it a bit (only in an attempt to make it less addicting and a little healthier.) Gotta love pinterest…

At the time I found this, I was 3months postpartum and searching for an easy to eat food that would satisfy me and keep me going. 2 Under 2 can be busy, busy… and nursing a chunky monkey keeps you starving pretty much 24/7.  I survived on these Mommy Energy Balls for months! Now, anytime a friend has a baby, this is the first thing I think to bring!

They are the perfect snack for a busy, new momma!

Mommy Energy Balls:

1 cup rolled oats

2/3 cup coconut flakes

1/2 cup plain almond butter

1/2 cup ground flax seed

1/2 cup dark chocolate chips

1/3 cup local honey

dash of vanilla extract

TO DO:

Pour all ingredients into a medium size bowl and mix thoroughly (you may have to get your hands messy!) Roll into approx 1inch balls, cover and refrigerate for 30min before eating. Store in the refrigerator in an airtight container for up to 1 week- they probably won’t last that long! 🙂

After Jodi had Mr. Tucker, this is the first thing she (and Matt) requested! Yum, Yum!
