Cauliflower “Fried Rice”

Looking for a delicious, healthy meal that the whole family will eat? This is it! You may think I’m crazy, but this is so yummy!

Both of my kids eat it and love it! Norah actually feeds herself dinner, without having to be reminded to “take a bite” every 30 seconds and Jonah scarfed his down (in usual fashion.)

Even my grain-loving husband says he likes it more than real fried rice!

Ingredients:

1 Head of Cauliflower grated

(remove stems, use a cheese grater or food processor to grate)

1 bag of frozen veggies

(fresh if your feeling fiesty)

8oz of sliced mushrooms

3 pieces of bacon chopped

1/2 cup diced onions

2 eggs

3 garlic cloves minced

1 TBSP coconut oil

2 TBSP soy sauce

Protein of choice

(we’ve tried it with both chicken and shrimp)

To Do:

1. In a large pan, saute the mushrooms, onion, and garlic in the coconut oil on medium/high heat until the onions become soft and mushrooms brown.

2. Add veggies and heat covered for 3-4min (until veggies are heated through).

I use a frozen bag of Asain style veggies. I try to use organic, but don’t always have them on hand. If I had more time and patience, I would use fresh veggies. But the #momlife is all about ease, right? πŸ™‚

3. Move ingrediants to side of pan and scramble the 2 eggs on the other side of the pan. When egg is cooked through, mix with veggies.

4. Stir in grated cauliflower, bacon, and soy sauce. Cook and stir frequently for 5-7min.

5. ENJOY!

This recipe is SUPER easy, SUPER fast, and SUPER amazing. If you were feeling crazy, it would be delicious with bok choy or bamboo shoots!

This is how I serve it to Jonah, just cut everything up in tiny pieces and he goes at it with both a spoon and his hands. πŸ™‚
